Easy Chocolate Chip Cookies Recipe

Biting into a chocolate chip cookie that is still a bit warm from the oven, the chocolate still soft and oozy, the cookie chewy, soft in the middle and crispy around the edges…

Can you imagine it?

If that made you drool, it’s time to go whip up a batch of chocolate chip cookies!

Lucky for you, this recipe is so easy that you could have one (or more) of these delicious cookies in your hand in under an hour. If you have made any of my recipes before, you know I don’t like to faff around with too many unnecessary steps. This recipe is no different. You don’t even need an electric mixer – just a whisk, or even a spoon, would do!

So, what are you waiting for? Let’s get to it!

What are the ingredients needed to make Chocolate Chip Cookies?
  • 170g butter,
  • 200g brown sugar,
  • 75g white sugar,
  • 1 large egg,
  • 1 egg yolk,
  • 1 tsp vanilla,
  • 300g flour,
  • 1/2 tsp baking soda,
  • 1/2 tsp salt (use only if using unsalted butter),
  • 1-2 cups dark chocolate chips or chopped baking chocolate

If you can’t find chocolate chips, you can just chop up some baking chocolate into chunks. In fact, I prefer chocolate chunks over chocolate chips because they allow for larger pockets of molten chocolate.

How to make Chocolate Chip Cookies at home?
  1. Melt the butter in a microwave or over a double boiler and allow it to cool to room temperature.
  2. Add both sugars into the cooled melted butter and mix.
  3. Add the whole egg, egg yolk, and vanilla. Mix to combine.
  4. Placing a flour sifter over the bowl (or over a separate bowl) sift together the flour, baking soda, and salt. Mix the flour mixture with the wet ingredients until they are both incorporated.
  5. Add the chocolate chips and mix until combined.
Tip: Save a few to add on top once the cookies have been formed.
  6. Refrigerate dough for 15 minutes.
  7. Form roughly 1 tablespoon-sized dough balls and place on a baking paper-lined cookie sheet. Place a few of the reserved chocolate chips on top of each dough ball.
Note: Make sure to leave space in between each cookie so they have room to spread.
Tip: You can make bigger or smaller cookies but note that cooking times will vary.
  8. Refrigerate once again for 10 minutes.
  9. Meanwhile, begin preheating the oven at 170°C.
  10. Bake the cookies for 12-15 mins.
Note: For crispier cookies, make sure the edges have turned golden brown before taking them out of the oven.
  11. Let the cookies cool on the tray before transferring them to an airtight container.
Tip: Pre-make all the cookie balls at once and keep them refrigerated as each batch cooks. Remember to thaw them for a bit if they have been in the fridge for longer than 10 minutes!
