Spicy, garlicky, sticky, this is a must-try recipe for sure!

Sticky, saucy chicken recipes are becoming something of an obsession for me. So, take it from the (self-proclaimed) expert: you NEED to make this dish.

The Schezwan sauce (click here for the recipe) is the main component of this dish, and it is super easy to make. It is made with chili, garlic, and a few other umami-packed flavors, which come together to make a BOMB condiment. Once the sauce is done (or purchased premade, if you prefer that), it is simply a matter of frying off some chicken and tossing both together. For such an easy recipe, you get such a satisfying eating experience. You’ll be licking your fingers and wishing you had more!

This goes so well as a side dish to fried rice or noodles, basically any Indo-Chinese menu you can think of would fit in well. Or you could just polish off a plate of them on their own – I won’t judge, it’s perfectly plausible.

What are the Ingredients Needed to Make Schezwan Chicken?
  • 1 kg of chicken,
  • To marinate:
    – 1 1/2 tsp salt,
    – 1 tbsp soya sauce,
    – 1 tbsp chili powder,
    – 1 tsp ginger/garlic paste,
    – 1/3 cup flour,
    – 1 egg,
  • Oil, to shallow or deep fry the chicken,
  • For the sauce:
    – 1-2 tbsp oil/butter,
    – 1 large onion, thinly sliced,
    – 2-3 Banana peppers or 1/2 bell pepper, thinly sliced,
    – 4-6 tbsp Schezwan sauce, as needed,
    – 1 tsp chili powder (optional),
    – Spring onions and sesame seeds, to garnish

Note that you can make Schezwan sauce at home (recipe here) or you can buy it premade.

How to Make Schezwan Chicken at Home?
  1. Combine all the ingredients for the marinade and mix with the chicken. Let it marinate for 30 minutes to few hours.
  2. Heat some oil in a shallow pan on medium heat and pan-fry the chicken for about 5-10 minutes on each side.
  3. Heat the oil in a pan and fry the onions and peppers for a minute.
  4. Add the Schezwan sauce and then the chicken. Mix to combine.
  5. Garnish with spring onions and sesame seeds.
  6. Serve while hot!

Prep Time: 10 min

Cook Time: 45 min

Serves: 5-6

Step 1: Marinate chicken.

  • 1 kg of chicken,
  • To marinate:

Step 2: Cook the chicken.

    Note: You can also deep fry the chicken if you prefer.

Step 3: Make the sauce.

  • For the sauce:
    – 1-2 tbsp oil/butter,
    – 1 large onion, thinly sliced,
    – 2-3 banana peppers or 1/2 bell pepper, thinly sliced,
    – 1 tsp chili powder (optional),
    – 4-6 tbsp Schezwan sauce, as needed,
    – Spring onions and sesame seeds, to garnish
  1. Heat the oil in a pan and fry the onions and peppers on high heat for a minute.
  2. Add the Schezwan sauce and then the chicken. Mix to combine.
  3. Garnish with spring onions and sesame seeds.
  4. Serve while hot!

Notes

– You can use any cut of chicken here, although I have used a mix of thigh, breast, and drumsticks. Lollipops or wings would be amazing!
– Adjust the amount of schezwan sauce according to your taste.
– You can make schezwan sauce at home (recipe here), or you can buy it premade.
– Leave the chili powder out if you’d prefer a milder taste.
