Crispy, flavorful, and so quick & easy to make.

So, you’ve got a craving for some fries but you don’t have any in your freezer. Here’s a quick and easy recipe that you can enjoy in just 30 minutes!

I made some double-fried potato chips when I was making chili potatoes sometime back and they were so good that I couldn’t stop snacking on them even before they went into the sauce. So, when I got the craving for some crispy potatoes a couple days back, I made a few changes to that recipe and came up with this one.

It was so good that we couldn’t get enough!

Chili and garlic are two of my favorite flavors and make a formidable combo when paired together – a classic, too! However, you could really go crazy with the flavors here. Maybe garlic and rosemary, or cumin and pepper, or how about some masala-flavored fries? That sounds amazing!

Here’s What You Need to Make Crispy Chili Garlic Fries
  • 2 large potatoes,
  • 1 tsp salt,
  • 1 tbsp chili powder,
  • 1 tsp garlic paste (or grated garlic),
  • 6 tbsp all-purpose flour (maida),
  • 6 tbsp cornflour,
  • Water, as needed,
  • Oil, for frying
How to Make Double-Fried Chili Garlic Fries:

As the name suggests, we will be frying these twice. The first fry is to cook them and the second is to get them super-duper crispy.

  1. Cut the potatoes into wedges and toss through with salt, chili powder, and garlic.
  2. Mix together flour, corn flour, and baking soda.
  3. Toss the potatoes through the flour and save the excess.
  4. Heat oil in a pan for deep frying and fry the potatoes in batches until partially cooked. Remove and let cool.
  5. Mix the remaining flour mixture with a few tablespoons of water to make a batter of medium thickness.
  6. Dip each potato into this batter and deep fry once again on high heat until they go golden brown and crispy.
What to Serve with Chili Garlic Fries

These fries are pretty flavorful on their own, so they do not need much more than some simple ketchup or mayo. I have topped it with some Kewpie Mayo and some Kewpie Cheesy Mayo. The combination was lip-smacking!

Here’s the step-by-step recipe guide to making these chili garlic fries:

Crispy Chili Garlic Fries

Prep Time: 10 min

Cook Time: 20 min

Serves: 4

Step 1: First Fry.

  • 2 large potatoes,
  • 1 tsp salt
  • 1 tbsp chili powder,
  • 1 tsp garlic paste (or grated garlic),
  • 6 tbsp all-purpose flour (maida),
  • 6 tbsp cornflour,
  • Oil, for frying
  1. Cut the potatoes into fry-shapes or wedges. Toss through with salt, chili powder, and garlic. Set aside.
  2. Mix together flour, cornflour, and baking soda.
  3. Toss the potatoes through this mixture and dust off the excess, saving the remaining flour for the next fry.
  4. Heat oil in a pan for deep frying and fry the potatoes in batches until partially cooked. Remove and let cool.
    Note: The goal is to cook the potatoes, they may not gain too much color.

Step 2: Second fry.

  • Remaining flour mixture,
  • 2-3 tablespoons of water,
  • Oil, for frying
  1. Mix the remaining flour mixture with a few tablespoons of water to make a batter of medium thickness.
    Note: If there isn’t leftover flour, or if there isn’t enough, just make more of the flour mixture as needed (equal parts flour and cornflour + salt and chili powder).
  2. Dip each potato into this batter and deep fry once again on high heat until they go golden brown and crispy.
  3. Optional: Sprinkle with salt and chili powder (taste first to check salt).
  4. Serve with your dipping sauce of choice while still warm!

Notes

– You can scale this recipe as needed. This should be enough for 4 people, so make more if you plan on serving more people!
