Granola bars are great to have around for when those mid-morning or evening hunger pangs strike. Instead of reaching for a sugary chocolate bar, you can have something nutritious and delicious too.
And trust me, these are delicious. In fact, they were gone so quickly the first time I made them that I ended up making another batch right after.

No-Bake Date ‘N’ Nut Granola Bars
Prep Time: 15 min
Cook Time: 0 min
Serves: 9-12 bars
Optional step: Roasting your ingredients
- 3/4 cup rolled oats,
- 1 cup nuts and seeds of choice
- Roast the peanuts in one of two methods:
– In the oven: place the oats in a single layer on a baking sheet and place in a 150° C oven for 10-15 minutes until they turn slightly darker in colour.
Add the nuts in the last 3-5 minutes of cooking or roast separately.
– On the stovetop: place your oats on a wide-bottom pan and cook for about 10-15 minutes on low heat, stirring frequently, until they turn slightly darker in colour.
Roast the nuts and seeds separately in a similar fashion (they will only take 2-3 minutes).
Step 2:
- 1/2 cup pitted dates,
- 1/8 cup creamy peanut butter (or any other nut butter),
- 1/8 cup kitul syrup, coconut treacle, honey, or any other liquid sweetener,
- 1/4 cup of chopped chocolate or chocolate chips,
- Blend the dates until a paste forms.
- Heat the peanut butter and liquid sweetener for a few seconds until it’s warm enough to combine easily.
- Add all the ingredients together and mix until it comes together.
- Line a 6″ square pan (or any other container) with cling film or baking paper.
- Press the mixture down firmly (make sure to press well).
- At this point, you can add some extra nuts, chocolate chips, etc., on top for presentation.
Step 3: Chill, cut, serve.
- Chill in the fridge for 30 minutes before cutting into squares or bars. Enjoy!
Notes
– The chocolate will melt as you mix so you can add a few extra at the end if you want.
– You can chop the nuts or leave them whole.
– You can add in any extra fixing’s that you like too. Any other types of nuts, seeds, other dried fruit, raisins, etc.
– Double, triple, or quadruple the recipe – scale it as desired!
