Perfect grilled chicken that can be cooked in the air fryer, oven, stove-top, or barbecue!

Whenever we go out to eat, this is something we always order. But making it at home is so easy and so much more satisfying!

The food is one of the things I miss the most whenever I leave India, and this grilled chicken – which is so common in restaurants that we end up getting it almost every single week – is something I crave. I realized how easy it is to make at home and achieve outstanding results!

This recipe contains a typical mix of Indian spices and is mixed together in a yogurt marinade. The curd or yogurt tenderizes the meat and helps the spices combine perfectly. The thing that makes it even better is a pureed onion and red chilies. The credits for this awesome idea should go to Hafsa Nazaar (my_baking_journal), a food blogger friend of mine from Instagram. While she uses green chili in her tandoori chicken marinade, I use red chilies instead because I prefer the flavour and it helps preserve that beautiful natural colour.

What ingredients do you need to make Tandoori Grilled Chicken at home?
  • 2 whole chicken legs,
  • For the marinade:
    – 1/4 tsp turmeric,
    – 1 tbsp Kashmiri red chili powder,
    – 1/4 tsp cumin powder,
    -1/2 tsp coriander powder,
    – 1/2 tsp salt,
    – 1 tsp ginger garlic paste,
    – 2 tbsp curd,
    – Juice of 1/2 lime,
    – 1 small onion,
    – 2-3 dried red chilies, seeds removed
How to cook Tandoori Grilled Chicken at home?

There are only two steps to this recipe. The first is to marinade the chicken and the second is to cook it.

There are several methods of cooking you can use to make tandoori grilled chicken at home. You can cook it in the air fryer (my favourite way to do it), in the oven, on a pan over the stove, or on a barbecue. Check the step-by-step guide below to get the full details about each method.

What to serve with Homemade Tandoori Chicken?

I love serving this grilled chicken with my homemade garlic mayonnaise. As I mentioned, this is how it is served in most restaurants in South India. You could also serve it with a mint and coriander yogurt chutney.

You can pair this grilled chicken with some naans or rice, or cut it up and put it in a shawarma-style wrap. Here are some of my favourite things to eat with tandoori grilled chicken:

Here’s the step-by-step to making tandoori grilled chicken at home.

Tandoori Grilled Chicken

Prep Time: 10 min

Cook Time: 20-30 min

Serves: 2

Step 1: Marinate chicken.

  • 2 whole chicken legs,
  • For the marinade:
    – 1/4 tsp turmeric,
    – 1 tbsp Kashmiri red chili powder,
    – 1/4 tsp cumin powder,
    – 1/2 tsp coriander powder
    – 1/2 tsp salt,
    – 1 tsp ginger garlic paste,
    – 2 tbsp curd,
    – Juice of 1/2 lime,
    – 1 small onion,
    – 2-3 dried red chilies, seeds removed
  1. Wash and pat the chicken dry. Make several slits on the top of the chicken.
  2. Soak the red chilies in hot water for a few minutes and then discard the water. Puree with onion to make a paste.
  3. Mix the rest of the ingredients and marinate the chicken for 1 hour to overnight.

Step 2: Cook chicken

  1. Cooking methods:
    – Air fryer: Preheat air fryer at 200 ° C, spray with oil (optional). Cook chicken for around 30 minutes (flipping halfway through) until fully cooked.
    – Oven: Preheat to 200° C. Line a tray with aluminum foil, spray with oil and cook chicken (flipping halfway through) for around 30-40 minutes until fully cooked. You can move the rack to the highest level to get some char marks during the final minutes.
    – Stove: Pan fry with a tablespoon of oil on medium-high heat for about 15-20 minutes. Watch carefully and adjust heat to make sure it doesn’t burn and is fully cooked.
    – Barbecue: Cook over an open flame, flipping to make sure both sides are well cooked and caramelized for about 15-20 minutes.

Notes

– You can use other cuts of chicken as well, but bone-in meat will provide the best flavor. Cooking times may vary.
