Saucy Loaded Veggie Noodles

A very basic noodle dish that I whipped up a couple days ago for dinner. It’s so easy to make and also one of those dishes that will help you clean out your fridge. Raid it and use up whatever vegetable/meat you have hanging around – the more the merrier!

This is a recipe that I made on a whim, but I’ve had numerous requests to remake it from several family members who’ve tried it. I didn’t do anything special, but with plenty of veggies and a couple of other ingredients that are easily available at home, the result was a super delicious noodle dish that made us come back for more. I’ve had others try this recipe out and tell me they loved it too!

I love this recipe because it is super yummy, but also because it is loaded full of goodness. I’ve used 6 different vegetables in it, and I would have added more if I had them! You can add any of your favourite vegetables, it doesn’t have to be what I’ve mentioned (see more details in the notes below). If you want to keep it completely vegetarian, leave the chicken out – it will be just as good!


Here’s a complete list of the ingredients you’ll need to make quick and easy noodles.

  • Half a packet of stick noodles,
  • 1/2 seasoning cube,
  • 2 tbsp tomato sauce,
  • 1 tbsp soya sauce,
  • Vegetables:
    – 1 carrot,
    – 1 onion,
    – 1 leek,
    – 3-4 beans,
    – 2 capsicums,
    – 1/4 of a cabbage,
  • Salt,
  • Chilli flakes,
  • 1 tsp ginger/garlic paste,
  • 100-200g boneless chicken (optional), (marinated in salt, masala powder, ginger/garlic paste, and curd).

My favourite brand of noodles to use is the Alli brand in Sri Lanka. These noodles are of medium thickness (slightly thinner than spaghetti) and so hold their shape better.

How to make Basic Saucy Noodles Recipe with lots of vegetables?

I keep repeating myself, but there’s nothing complicated about this recipe. You just have to cook the noodles, stir-fry the veggies, and put them together. Yes, it’s that simple. I have explained the method in detail in the step-by-step guide below:

Saucy Loaded Veggie Noodles

Prep Time: 20 min

Cook Time: 15 min

Serves: 2-3

Step 1: Prep vegetables.

  • Vegetables:
    – 1 carrot,
    – 1 onion,
    – 1 leek,
    – 3-4 beans,
    – 1 capsicum,
    – 1/4 of a cabbage,
  • 100-200g boneless chicken (optional), marinated in:
    – 1 tbsp curd,
    – 1 tsp ginger garlic paste,
    – salt, to taste,
    – 1 tbsp chili powder or curry masala
  1. Chop all the veggies in similar-sized pieces.
  2. Cut the chicken into small cubes and marinate it in the ingredients listed below it.

Step 2: Boil Noodles.

  • 1/2 a packet of stick noodles,
  • water, to boil,
  • 1 tbsp salt,
  1. Add the salt into the water and bring to a boil.
  2. Add the noodles and cook until they reach the point just before fully cooked.
  3. Drain the noodles.
    Note: If you are leaving the noodles to sit for a while, put them in some cold water to prevent them from drying out.

Step 3: Bring it all together.

  • 2 tbsp oil,
  • 1/2 seasoning/stock/soup cube,
  • 2 tbsp tomato sauce,
  • 1 tbsp soya sauce,
  • Salt,
  • Chilli flakes,
  • 1 tsp ginger/garlic paste,
  • all the prepped veggies and meat
  1. Heat the oil in a pan and the chicken in. Once the chicken is cooked, remove it and set aside.
  2. Add the ginger/garlic paste into the same pan (add a bit more oil if necessary).
  3. With the heat on high, add all the veggies in and stir-fry for 2-3 minutes. Do not let them get mushy.
  4. Add the seasoning cube, salt, chili flakes, soya sauce, and tomato sauce.
  5. Quickly toss everything through and add the noodles and chicken.
  6. Stir-fry for a minute and remove from the heat.

– You can use any vegetables you like. Mushrooms, bell peppers, leafy greens, would be all great in here.
– Substitute any other meat/protein in place of the chicken or even leave it out completely for a vegetarian version of this dish.
– You can even add a scrambled egg.
